Recipe Review: Sweet Potato Chews

About 6 or so months ago, I discovered Pinterest.  And promptly fell in love with it.

So did Geoff.

Mostly because my favorite things to pin are new recipes.  Which means I'm constantly trying new recipes that I discover.  Most are hits.

Bandit has also benefited from it.  You see, our little Bandit is allergic to corn.  Which is found in a ridiculous amount of commercially available dog products...it's not even good for dogs if they're not allergic!  So we're the obsessive dog parents in the store checking labels.  So every now and then, I'll try making homemade treats.  My last adventure was before we moved to Florida, they turned out pretty well, but it made a huge batch.

I decided this time I'd try something a little easier...and by a little easy, I mean super easy: Sweet Potato Chews.  (Click here for the source.)

Disney Dining Review: Pizzafari & Flame Tree BBQ from 5/20

Last weekend one of my sorority sisters was heading down to Orlando with a few of her friends.  Luckily real life didn't get in the way, so I was able to head up and meet them at the Animal Kingdom!

I got to the park about 10 minutes after my friend, instead of trying to rush to catch up, I took a leisurely stroll back to the Safari (I mean, after all, I can just head up any time!)  I grabbed an apple from a cart by the safari and waited for them to finish.

How about an update?

Last I posted, we were just getting into May, now we're almost done!  Sorry about that.

Since then, we've been keeping busy.  Bandit had his first taste of steak...which might have been a mistake.  Now whenever we're cooking he's lingering around "hey, you got steak there?"  He's gotten better, but only because I think he realized that everything we cook isn't steak!
Steak? I like steak.

Saturday the 12th we headed over to one of Geoff's coworker's houses as they were having a party since his coworker had graduated from Grad school.  It's really nice to know we're making some friends.  They're all really great people!

That Sunday, it was Mother's Day.  It was the first Mother's Day in years that I actually got to spend with my Mom!  My Mom, Dad, and brother came over and I made lunch.  We then took a trip over to the neighborhood that we're building our house at and showed everyone the lot.  Unfortunately, the model wasn't open, so we weren't able to show them any of the options we picked.  Soon enough though, they'll be able to visit our new home!

We also received an offer on our house in Rochester the following day.  Unfortunately, the buyer couldn't get financed, so that fell through.  ...anyone interested in a townhome in Rochester?  Anyone?  Fingers crossed that it will sell soon.

Celebrating our first anniversary!

I keep forgetting to post this.

A couple weeks ago Geoff and I decided to go ahead an book the hotel for our first anniversary trip!  I won't post the exact dates here as it's a public blog, but we'll be celebrating in the fall.

We love Food and Wine Festival at Epcot.  So when we were discussing what we wanted to do for our anniversary, heading up to Food and Wine Festival came up as the perfect choice.  Yes, we're only an hour away from Disney World, but driving an hour after imbibing at the Festival is kind of frowned upon (and unsafe.)  So in order to fully enjoy it, we're staying on-site.  And yes, for anyone who is wondering, it totally makes me geek out that WDW is a "Staycation" for us...

Disney Dining Reviews: Columbia Harbor House 4/29


Last Sunday I headed up to the Magic Kingdom for the afternoon.  I got there right before the 3 o'clock parade started (which is the worst time to enter a park.)  Since I hadn't eaten lunch yet, I was starving.

The most difficult part of living close to Disney?  Realizing you can't eat like you're on vacation when you go up!  So I knew exactly where I would head for a more healthy lunch: Columbia Harbor House.

To Infinity!

It's been a pretty fun weekend for us.  On Friday, Geoff had off and my day was really slow, so we decided to go up to the Space Center.  Annual Passes were only $5 more than the normal ticket, so we're now members of the "Commander's Club."  Something Geoff is really excited about!

As a tip, if you're a family planning on coming down, it might be a great idea for one member of the group to get an Annual Pass.  With it, you can buy regular tickets and get $10 off.  It also gives you a 20% discount off food and 10% off merchandise at "The Space Shop."
